These roasts are commonly known as "prime rib" roasts but the official name is standing rib roast. Whatever the name these roasts are the foundation of many a fabulous meal. The ribeye muscle is cut from the back ribs and then tied back on for a built-in roasting rack.
Figure on having approximately 1 lb of weight per adult.
We accept pre-orders for these roasts in the autumn of each year, and should have the meat ready for delivery for the November or December delivery runs.
