The bone-in version of these roasts are commonly known as "prime rib" roasts but the official name is "standing rib roast".  Whatever the name these roasts are the foundation of many a fabulous meal.  The rib eye muscle is cut from the back ribs for these boneless roasts.

Figure on having approximately 3/4 lb of weight per adult.
