Our butcher takes less tender pieces of our beef and runs them through a machine to mechanically tenderize them (also known as swissing).  This breaks up the tough muscle fibers and creates a lean cut of beef that is perfect for pan-frying or braising.  Chicken fried steak, cheese steaks and swiss steak are common uses for cube steaks as are quick cooked Chinese beef recipes like beijing beef.  You may want to try this customer recommended Cube Steak Recipe.

We appreciate being your family's ranchers.  We raise our beef ethically on our farm in southeast Idaho.  They are completely grass-fed and grass-finished, meaning no grain whatsoever.  We never give our animals hormones or antibiotics.  We look forward to seeing you at one of our many pick up locations soon.
