Cube Steak Parmesan

John and I really enjoyed this new way to prepare cube steaks

Ingredients

  • (2 pounds) Beef Cubed Steaks - 2 pack
  • (1 cup) flour
  • (3 Tablespoons) cornstarch
  • (1.5 teaspoon) Garlic Salt/Powder
  • (2 teaspoon) Italian Seasoning
  • (1/4 teaspoon) Black Pepper
  • (2 large) Eggs, whisked
  • (1/3 cup) OIl-for browning
  • (24 oz) Spagetti Sauce
  • (4 slices) Provolone Cheese
  • Parmesan-grated
  • Spaghetti or Spaghetti Squash

Directions

The original recipe called for the meat to be finished in the crock pot I finished mine in a dutch oven in our oven.

Instructions
1)   Place the flour, cornstarch, garlic salt, salt, Italian seasoning and pepper in a bowl and mix.
2)   Whisk the eggs in a second bowl.
3)   Dip each cube steak into the egg first and then coat each side with flour mixture.  Continue with each cube steak.  Allow the cube steaks to rest with flour mixture on them for 10 minutes.
4)   Heat the oil in a skillet over medium heat until it starts to ripple.
5)   Place the prepared cube steaks into the hot oil and brown it on each side, about one or two minutes per side.
6)   Once the beef is browned, place each piece of steak in a slow cooker (dutch oven).
7)   Pour the spaghetti sauce over the beef.  Cover and cook on low for 6-7 hours.  I did about 2-3 hours in a 275 degree oven.
8)   The last five minutes of cooking, remove the lid and place the 4 slices of cheese over the cube steaks. Let cheese melt.
9)   Serve the steaks over spaghetti or spaghetti squash with additional sauce and grated Parmesan.
