Beef brisket is a naturally less-tender portion of the animal but careful cooking can make it into a beefy masterpiece. Recently, the development of pellet fed home smokers have made it possible to prepare smoked brisket at home that can rival the best bbq joint's offerings. Smoking is not the only way to prepare a wonderful brisket! Low and slow cooking in your oven can transform this tougher cut into a fabulous tender meal.
Our preferred way to prepare brisket is using recipes like this one, Nach Waxman's Beef Brisket. Baking the brisket, covered with tomato paste, in a foil packet over a pile of sautéed onions has produced delicious results!
We stock primarily half brisket roasts, but we also have whole briskets available on occasion.
