The top sirloin steak promises good flavor and moderately tender beef. The top sirloin muscle sits near the rear leg, and thus does a fair bit of work. The meat can be a bit less tender than other cuts, but it full of flavor, fairly lean and an all around great value.
Sirloin steaks are lovely marinated, grilled, pan seared and are the perfect steak for reverse searing. It is a versatile cut that can be prepared any number of ways. To maintain maximum juiciness we recommend not cooking past medium.
